- 6 c. peeled, grated zucchini
- 6 c. sugar
- 1 (20 oz.) can crushed pineapple
- 1 Tbsp. lemon juice
- 1 pkg. Sure-Jell
- 1 (6 oz.) or 2 (3 oz.) apricot Jell-O
Directions

1Cook zucchini on low heat for one hour.

2Add sugar, pineapple, lemon juice and Sure-Jell.

3Boil for 5 minutes.

4Take off burner. Add apricot Jell-O.

5Stir well to blend.

6Pour into sterilized jelly jars.

7Seal and cool.
