  • 6 c. peeled, grated zucchini
  • 6 c. sugar
  • 1 (20 oz.) can crushed pineapple
  • 1 Tbsp. lemon juice
  • 1 pkg. Sure-Jell
  • 1 (6 oz.) or 2 (3 oz.) apricot Jell-O

Directions

    Cook zucchini on low heat for one hour.

    Add sugar, pineapple, lemon juice and Sure-Jell.

    Boil for 5 minutes.

    Take off burner. Add apricot Jell-O.

    Stir well to blend.

    Pour into sterilized jelly jars.

    Seal and cool.
