Zucchini Jelly

  • 6 c. grated zucchini
  • 6 c. sugar
  • 2 tsp. lemon juice
  • 1 (16 oz.) can pineapple
  • 1 box Pen-Jell
  • 1 (6 oz.) box Jell-O apricot or strawberry

Directions

    Boil grated zucchini and sugar for 6 minutes; add lemon juice, pineapple and Pen-Jell.

    Boil 6 minutes more.

    Put in sterilized jelly jars.
  4. 4
    Melt paraffin and pour on top to seal.
