- 1 lb. lean ground beef
- 2 cloves garlic, minced
- 1 (15 oz.) can tomato sauce
- 1 tsp. salt
- 1 tsp. each: basil and oregano
- 1/2 tsp. each: thyme and marjoram
- 1 1/2 c. dry cottage cheese or low-fat Ricotta cheese
- 1/2 c. freshly grated Parmesan cheese
- 1 egg, lightly beaten
- 4 medium zucchini
- 1 c. shredded part-skim Mozzarella cheese
Directions

1Brown beef with onion and garlic; drain off fat.

2Stir in tomato sauce, salt and herbs.

3Simmer uncovered for 10 minutes. Combine 1/2 of Parmesan, cottage (or Ricotta) cheese and egg until well blended; set aside.
