Zucchini Lasagna

Ingredients

  • 1 large zucchini (10 x 3-inch) or 2 medium zucchini
  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 medium tomato, chopped
  • 1 c. tomato sauce
  • salt to taste
  • freshly ground black pepper to taste
  • pinch of oregano
  • pinch of basil
  • 1 c. Ricotta cheese
  • 1 c. cottage cheese
  • 3/4 c. grated Mozzarella cheese

Directions

    Cut off stem and blossom ends of zucchini.

    Wash and slice zucchini lengthwise into thin slices.

    Saute beef until it loses its color; drain fat.

    Add onion, tomato, tomato sauce, 1/4 cup water, salt, pepper, oregano and basil.

    Simmer 10 to 12 minutes. Stir together Ricotta, cottage cheese and Mozzarella.
