Zucchini Lasagna

  • 4 oz. Egg Beaters
  • 3/4 c. water
  • 12 oz. Mozzarella low-fat shredded cheese
  • 2 (30 oz.) jars spaghetti sauce (your choice)
  • 1 box Kellogg's Corn Flakes bread crumbs
  • 4 large zucchini

Directions

    Preheat oven to 350°.

    Pour Egg Beaters and water into bowl; mix.

    In another bowl, put Kellogg's Corn Flakes crumbs.

    Slice zucchini.

    Dip slices in egg, then in crumbs.

    Put on ungreased cookie sheet.

    Bake for 1/2 hour.

    Layer 1/2 of the zucchini, sauce and cheese in casserole dish.

    Layer remaining ingredients. Bake in oven for 30 minutes.
