  • 1 lb. ground beef
  • 1 c. small curd cream-style cottage cheese
  • 2 c. shredded Mozzarella, divided
  • 1/2 tsp. basil
  • 2 medium tomatoes, chopped
  • 1 medium zucchini, unpeeled and sliced thin
  • 2 eggs
  • 1/4 tsp. pepper
  • 1/2 c. chopped onion
  • 2/3 c. Parmesan cheese, divided
  • 1 tsp. oregano
  • 1 (6 oz.) can tomato paste
  • 1 (6 oz.) can water
  • sprinkle of garlic powder
  • 1 c. milk
  • 3/4 c. buttermilk baking mix
  • 1 tsp. salt

Directions

    Cook and crumble ground meat in skillet.

    Add onion and brown. Grease 13 x 9-inch casserole.

    Put cottage cheese in bottom, then layer with 1/2 of each cheese.

    Add herbs, paste, water and tomatoes to meat and heat.

    Spoon over cheese.

    Sprinkle half of remaining Mozzarella cheese, then top with zucchini.
