  • 1 1/2 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/4 tsp. baking powder
  • 1 c. sugar
  • 1 1/2 c. finely shredded zucchini, unpeeled
  • 1 egg
  • 1/4 c. cooking oil
  • 1 tsp. finely shredded lemon peel
  • 3/4 c. chopped walnuts

Directions

    In a mixing bowl, stir together flour, cinnamon, baking soda, salt, nutmeg and baking powder.

    Set aside.

    In mixing bowl, beat together sugar, zucchini and egg.

    Add oil and lemon peel; mix well.

    Stir flour mixture into zucchini mixture and nuts. Pour batter in 8 x 4 x 2-inch pan.

    Bake at 350° for 55 to 60 minutes or until toothpick inserted in middle comes out clean. Cool in pan for 10 minutes, then turn out and cool on rack.
