Zucchini Nut Bread

  • 1 1/2 c. self-rising flour
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 c. sugar
  • 1 c. finely shredded, unpeeled zucchini
  • 1 egg
  • 1/4 c. oil
  • 1/2 c. chopped nuts

Directions

    In a mixing bowl, stir together the flour, cinnamon and nutmeg; set aside.

    In a mixing bowl, beat together sugar, zucchini and egg.

    Add oil; mix well.

    Stir flour mix into wet mixture.

    Gently fold in nuts.

    Turn into greased loaf pan.

    Bake at 350° for 50 to 60 minutes or until toothpick inserted in center comes out clean.

    Cool in pan 10 to 15 minutes.

    Freezes well.
