- 1 1/2 c. self-rising flour
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 c. sugar
- 1 c. finely shredded, unpeeled zucchini
- 1 egg
- 1/4 c. oil
- 1/2 c. chopped nuts
Directions

1In a mixing bowl, stir together the flour, cinnamon and nutmeg; set aside.

2In a mixing bowl, beat together sugar, zucchini and egg.

3Add oil; mix well.

4Stir flour mix into wet mixture.

5Gently fold in nuts.

6Turn into greased loaf pan.

7Bake at 350° for 50 to 60 minutes or until toothpick inserted in center comes out clean.

8Cool in pan 10 to 15 minutes.

9Freezes well.
