  • 1 c. sugar
  • 1 c. brown sugar
  • 1 c. salad oil
  • 3 eggs, beaten well
  • 2 c. shredded zucchini
  • 3 tsp. vanilla
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 3 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/2 c. chopped nuts

Directions

    Combine sugar, oil and eggs; add zucchini.

    Sift flour, baking soda, baking powder and salt.

    Add to zucchini mixture.

    Mix well. Add nuts.

    Pour into well-greased and floured tube pan and bake at 325° for 1 to 1 1/4 hours.
