- 1 onion, minced
- 2 Tbsp. olive oil
- 2 Tbsp. butter
- 2 medium size zucchini
- salt and pepper
- 6 eggs, beaten
- 2 Tbsp. minced parsley
- 2 Tbsp. grated cheese
Directions

1Saute onion in butter and oil until soft; do not brown.

2Pare and slice zucchini very thin.

3Add to sauteed onion.

4Season with salt and pepper to taste.

5Cook slowly for 10 minutes, until zucchini is golden brown.
