- 1/2 teaspoon minced garlic
- 1 tablespoon olive oil
- 4 medium zucchini, cut into 1/4-inch slices
- 1 (14 1/2 ounce) can Italian-style diced tomatoes, undrained
- 1 teaspoon seasoning salt
- 1/4 teaspoon pepper
- 1/4 cup grated parmesan cheese
Directions

1Saute garlic in oil.

2Add zucchini and cook for 4-5 minutes.

3Stir in the tomatoes, seasoned salt and pepper.

4Simmer, uncovered, for 9-10 minutes or until liquid is absorbed and mixture is heated through.

5Sprinkle with as much parmesan cheese as you like (I never measure it).
