- 5 small zucchini (approximately 1 lb.)
- 1/2 tsp. each: salt, pepper and paprika
- 1/2 c. Parmesan cheese, grated
- 4 Tbsp. butter, melted
Directions

1Scrub but do not peel zucchini; trim ends.

2Cut the zucchini into 2-inch lengths, then cut each length into quarters, lengthwise.

3Bring zucchini to a boil in salted water to cover; simmer until tender, but not soft.

4Drain thoroughly.

5Butter a 9-inch ovenproof dish; arrange zucchini in a layer over the bottom.

6Sprinkle with salt, pepper, paprika and cheese.

7Pour the melted butter over all.

8Place under the broiler until cheese is melted.

9Makes 6 servings.
