- zucchini (about 3 gal.)
- 2 c. slacked lime
- 2 gal. water
- 2 qt. vinegar
- 9 c. sugar
- 1 Tbsp. pickling spice
- 1 tsp. green coloring
Directions

1Peel and chunk the zucchini.

2Mix with the lime and water. Let stand 24 hours.

3Stir twice a day. Drain and rinse in cold water. Let stand in cold water 12 hours.

4Heat the vinegar, sugar, pickling spice and coloring.

5Let stand 12 hours.

6Cook 35 minutes.

7Put into hot pint jars and seal.
