  • 3 lb. zucchini (1/2-inch pieces)
  • 3 medium onions, sliced (3 c.)
  • 1 large green pepper, chopped
  • 2 whole cloves
  • 2 Tbsp. salt
  • 1 1/2 c. cider vinegar
  • 2 1/2 c. sugar
  • 3/4 tsp. turmeric
  • 1 Tbsp. mustard seed
  • 3/4 tsp. whole celery seed
  • 1 tsp. ground cloves

    Combine zucchini, onions and green pepper in large roaster pan.

    Salt and garlic.

    Stir.

    Add 3 trays ice cubes.

    Mix through.

    Cover and let stand 3 hours.

    Combine vinegar, sugar, turmeric, mustard seed, celery seed and cloves in Dutch oven and bring to boil.
