  • 5 c. squash
  • 1 c. sugar
  • 1/4 tsp. nutmeg
  • 3 Tbsp. lemon juice
  • 3 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 1/2 c. brown sugar
  • 1 Tbsp. water
  • crust for 2-crust pie, unbaked

    To prepare squash, peel, scoop out the center and slice like apples.

    Cover with cold water and bring to a boil.

    Remove from heat and let stand 5 minutes.

    Drain.

    Add remaining ingredients and mix well.

    Bake in the 2-crust pie shell at 450° for 15 minutes, then at 300° for 45 to 60 minutes.
