  • 1 c. cooked zucchini
  • 1 c. Milnot or Carnation evaporated milk
  • 1 c. sugar
  • 1 egg
  • 1 1/2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. vanilla

Directions

    Peel and cook zucchini; put in blender with all the other ingredients.

    Blend well.

    Pour in a 9-inch unbaked pie shell and bake in a 425° oven for 10 minutes, then in a 350° oven until set (about 30 to 40 minutes).

    Sprinkle cinnamon on top of pie before baking, if desired.
