- 4 c. thinly sliced zucchini
- 1 c. sparsely chopped onion
- 1/2 c. butter
- 1/2 c. parsley
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. basil
- 1/4 tsp. garlic powder
- 1/4 tsp. oregano
- 2 well beaten eggs
- 8 oz. grated Mozzarella
- 1 (8 oz.) can Pillsbury crescent rolls
Directions

1Cook zucchini and onion in butter until tender.

2Stir in parsley and spices.

3Blend together eggs and cheese and stir in vegetable mixture.

4Separate crescent triangles and place in an ungreased 11-inch quiche pan.

5Press over bottom and up sides. Pour in egg-vegetable mixture.

6Bake at 375° for 18 to 20 minutes. Let stand 10 minutes before serving.
