  • 1 lb. boneless salt cod King Sooper's 1 lb For $7.99 thru 02/09
  • 1/2 cup flour
  • 1/3 cup water
  • 1/4 cup finely chopped onions
  • 2 eggs
  • 1 Tbsp. chopped fresh parsley
  • 2 tsp. CALUMET Baking Powder
  • 1/4 tsp. ground black pepper
  • 1 qt. (4 cups) oil, for frying

    Place fish in large bowl.

    Add enough water to completely cover fish.

    Let stand at room temperature 8 hours, changing the water at least every 2 hours to remove excess salt.

    Rinse fish; place in large skillet.

    Add enough water to completely cover fish; bring to boil on medium-high heat.

    Reduce heat to medium-low; simmer 5 min or until fish is tender.

    Rinse fish.

    Shred with fork; place in medium bowl.

    Add flour, water, onions, eggs, parsley, baking powder and pepper; mix well.

    Heat oil in large deep skillet to 375F.

    Carefully add level tablespoonfuls of the fish mixture, in batches, to skillet.
