  • 3 c. flour
  • 1 c. chopped walnuts
  • 2 tsp. baking soda
  • 3/4 tsp. nutmeg
  • 1 1/2 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3 large eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 (20 oz.) can crushed pineapple, drained

Directions

    Grease and flour 2 loaf pans.

    Preheat oven to 350°.

    Combine flour, nuts, baking soda, cinnamon, salt, nutmeg and baking powder. Set aside.

    Beat eggs until frothy.

    Add oil, sugar and vanilla, beat until foamy.

    Stir in zucchini and pineapple.

    Add dry ingredients and mix well.

    Pour into pans.

    Bake for 1 hour (60 minutes).
