Zucchini-Pineapple Bread

Ingredients

  • 1 1/2 c. white flour
  • 1 1/2 c. whole wheat flour
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 3/4 c. chopped pecans
  • 3 eggs
  • 2 c. sugar
  • 1 c. oil
  • 2 tsp. vanilla
  • 2 c. zucchini, grated
  • 8 oz. can crushed pineapple, drained

Directions

    In large bowl, mix together first 7 ingredients and set aside. In another bowl, cream eggs, sugar, oil and vanilla together.

    Fold in zucchini and crushed pineapple.

    Next, fold in dry ingredients. Preheat oven to 350° and bake in 2 greased loaf pans for 40 to 45 minutes.

    Let cool 20 minutes before removing from pans.
