Zucchini-Pineapple Bread

Ingredients
- 1 1/2 c. white flour
- 1 1/2 c. whole wheat flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 3/4 c. chopped pecans
- 3 eggs
- 2 c. sugar
- 1 c. oil
- 2 tsp. vanilla
- 2 c. zucchini, grated
- 8 oz. can crushed pineapple, drained
Directions

1In large bowl, mix together first 7 ingredients and set aside. In another bowl, cream eggs, sugar, oil and vanilla together.

2Fold in zucchini and crushed pineapple.

3Next, fold in dry ingredients. Preheat oven to 350° and bake in 2 greased loaf pans for 40 to 45 minutes.

4Let cool 20 minutes before removing from pans.
