Zucchini Pineapple Bread

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 (8 1/2 oz.) can crushed pineapple, drained
  • 3 c. flour
  • 2 tsp. soda
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 c. chopped pecans
  • 1 c. raisins
  • 1 tsp. salt

Directions

    Sift together flour, soda, baking powder, salt, cinnamon and nutmeg.

    Set aside.

    In large bowl combine eggs, oil, sugar, vanilla, zucchini and pineapple.

    Gradually beat in flour mixture. Stir in raisins and pecans.

    Makes 2 large loaves, or 7 small loaves.

    Bake at 350°; large loaves for 1 hour, small loaves 30 minutes.
