- 3 eggs
- 1 c. oil
- 2 c. sugar
- 3 c. flour
- 3 tsp. vanilla
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 c. raisins (optional)
- 3 tsp. cinnamon
- 1 c. chopped walnuts
- 1 (8 oz.) can crushed pineapple, drained
- 2 c. grated zucchini
Directions

1Beat eggs until fluffy.

2Add oil, sugar, vanilla and zucchini. Mix well.

3Add dry ingredients and mix well.

4Add raisins, pineapple and nuts; blend.

5Bake in greased and floured Bundt pan or 2 long pans at 325° for about 1 hour and 20 minutes.

6(Or if using loaf pans, bake 1 hour.)
