Ingredients

  • 3 Tbsp. butter
  • 3 zucchini, cut in 1/4-inch thick long slices
  • 2 garlic cloves, minced
  • 1 onion, sliced
  • 1 tsp. basil
  • 3 c. tomatoes, chopped
  • 1/2 c. sweet white wine
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. chervil
  • 1 tsp. parsley

Directions

    Heat the butter in large skillet.

    Saute the zucchini, garlic and onion until tender. Add tomatoes, seasonings and wine. Reduce heat.

    Simmer slowly until liquid is completely reduced. Serve as side dish or good over rice.
