- 3 slices Provolone cheese (if desired, other cheese may be used)
- 2 c. shredded zucchini
- 3 Tbsp. chopped onions
- 1/2 c. bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. parsley
- 2 eggs
- oil
Directions

1Grate cheese in a blender if available, or chop finely. Remove stem ends from zucchini and shred finely.

2Press out as much moisture as possible from zucchini using paper towels. Combine with onion, crumbs, salt, pepper, parsley and eggs.

3Put 1 teaspoon oil in each of twelve muffin cups.

4Heat at 375° for 3 or 4 minutes.

5Carefully spoon batter into sizzling oil.

6Bake 20 minutes.

7Makes 12 puffs.
