Zucchini Sausage Casserole

- 6 medium zucchini (or yellow squash), halved lengthwise
- Salt to taste
- 1/2 lb. hot Italian sausage
- 1 small onion, chopped
- 1 clove garlic, crushed
- 1/3 c. flavored bread crumbs
- 1/3 c. Parmesan cheese, grated
Directions

1Cook zucchini in boiling salted water 10 minutes.

2Scoop out insides of shells and mash.

3Drain shells and place on baking sheet.

4Remove sausage meat from casings; break it up and saute 5 minutes.

5Stir in onion and garlic; saute until onion is soft. Stir in zucchini and crumbs.

6Spoon into shells; sprinkle with cheese.

7Bake at 350° for 30 minutes.

8Serves 6.
