Zucchini Sausage Casserole

Ingredients

  • 6 medium zucchini (or yellow squash), halved lengthwise
  • Salt to taste
  • 1/2 lb. hot Italian sausage
  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • 1/3 c. flavored bread crumbs
  • 1/3 c. Parmesan cheese, grated

Directions

    Cook zucchini in boiling salted water 10 minutes.

    Scoop out insides of shells and mash.
  3. 3
    Drain shells and place on baking sheet.

    Remove sausage meat from casings; break it up and saute 5 minutes.

    Stir in onion and garlic; saute until onion is soft. Stir in zucchini and crumbs.

    Spoon into shells; sprinkle with cheese.

    Bake at 350° for 30 minutes.
