  • 6 small zucchini, grated
  • 1/2 to 1 onion
  • 6 to 8 broken saltine crackers
  • 1 to 2 eggs
  • 1 small can evaporated milk
  • 1/2 block Cheddar cheese, grated
  • garlic salt, salt, pepper and grated Parmesan cheese

Directions

    Grate zucchini and onion and fry in butter slightly.

    Combine with all other ingredients in round casserole dish.

    Bake, uncovered, at 350° for 1 hour.
