- 5 medium zucchini, sliced thin
- 1/4 c. butter
- 1 medium onion, chopped
- 2 cans chicken broth
- 1/2 to 1 can water
- 1/2 c. light cream (half and half)
- 1/4 tsp. nutmeg
Directions

1Saute onion and zucchini in butter; simmer for 15 minutes. Pour into blender, small amount at a time; blend until smooth. Add chicken broth, cream, nutmeg and salt and pepper to taste. Store in refrigerator until ready to serve.

2Can be served hot or cold.
