Ingredients
- 4 medium sized zucchini
- 3 Tbsp. butter
- 1 medium onion, chopped very fine
- 2 Tbsp. flour
- 1 c. milk
- salt and pepper
- 1/2 c. cream
- 1 slice bread, cubed
Directions

1Scrub zucchini; remove ends and cook, covered in a small amount of salted water, until tender, about 5 minutes.

2Drain, reserving water and chop.

3Heat 2 tablespoons butter in a pan and fry onion until yellow.

4Blend one cup of reserved water with flour until smooth and add to onion.

5Bring mixture to a boil, stirring; add zucchini, milk and salt and pepper.

6Simmer 10 minutes and add cream and bread, which have been toasted in butter.
