  • 3 eggs or substitute
  • 1 c. vegetable oil
  • 2 c. sugar
  • 3 c. plain all-purpose flour
  • 3 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 tsp. vanilla
  • 1/2 c. chopped pecans
  • 2 c. shredded zucchini squash

Directions

    Sift flour once, measuring 3 cups.

    Sift flour, soda, salt, baking powder and cinnamon together.

    Beat eggs one at a time in separate bowl; add oil, sugar and vanilla.

    Mix in dry ingredients.

    Add squash and pecans, mixing well.

    Bake in 2 well-greased 9 x 5 x 3-inch loaf pans 1 hour and 15 minutes at 350°.

    Delicious served warm with butter.
