- 2 tomatoes
- 1 tsp. minced shallots or green onions
- 1 tsp. minced garlic
- 1 Tbsp. lemon juice
- 1 Tbsp. chopped parsley
- salt and pepper to taste
- 1 zucchini, shredded
Directions

1Slice small portion off bottom of each tomato; scoop out pulp. Saute rest of ingredients until done.

2Stuff into tomatoes. Place tops back on tomatoes.

3Bake at 350° for 30 minutes.
