- 6 c. finely chopped zucchini
- 1 onion, chopped
- 1 can cream of mushroom or cream of celery soup
- 1 c. sour cream
- 1 c. grated carrot
- 1 box Stove Top stuffing mix (reserve 1/2 c.)
- 1/2 c. melted margarine
Directions

1Saute zucchini and onion until tender.

2Combine with all ingredients in large bowl except margarine and 1/2 cup stuffing. Mix thoroughly.

3Spray 13 x 9 x 2-inch pan with Pam.

4Pour mixture into pan.

5Combine margarine and 1/2 cup stuffing mix and sprinkle on top.

6Bake at 350° for 30 minutes, uncovered.
