Zucchini Stuffing

Ingredients

  • 6 c. finely chopped zucchini
  • 1 onion, chopped
  • 1 can cream of mushroom or cream of celery soup
  • 1 c. sour cream
  • 1 c. grated carrot
  • 1 box Stove Top stuffing mix (reserve 1/2 c.)
  • 1/2 c. melted margarine

Directions

    Saute zucchini and onion until tender.

    Combine with all ingredients in large bowl except margarine and 1/2 cup stuffing. Mix thoroughly.

    Spray 13 x 9 x 2-inch pan with Pam.

    Pour mixture into pan.

    Combine margarine and 1/2 cup stuffing mix and sprinkle on top.

    Bake at 350° for 30 minutes, uncovered.
