- 22 SnackWell's fat-free wheat crackers
- 1/4 c. shredded reduced-fat Swiss cheese
- 1 c. sliced mushrooms
- 1 c. shredded zucchini
- 1/3 c. chopped red or green pepper
- 1/3 c. chopped scallions
- 2 cloves garlic, minced
- 2 tsp. margarine
- 1 1/2 c. Egg Beaters
- 1 c. skim milk
- 1 tsp. dried oregano leaves
- 1/4 tsp. coarsely ground black pepper
- 1/8 tsp. liquid hot pepper seasoning
Directions

1Line bottom of greased 9-inch pie plate with 10 crackers. Stand remaining crackers around edge.

2Sprinkle bottom with cheese.

3In skillet, saute mushrooms, zucchini, pepper, scallions and garlic in margarine until tender.

4Spread vegetable in plate. Combine remaining ingredients; pour over vegetable mixture.

5Bake at 375° for 30 to 35 minutes or until set.

6Tent crackers along edge with foil to prevent overbrowning.
