Zucchini Walnut Bread

Ingredients

  • 1 c. walnuts
  • 2 c. grated zucchini (not pared)
  • 1 c. oil
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. baking powder
  • 2 c. sugar
  • 1 tsp. vanilla
  • 1 1/2 tsp. salt
  • 4 eggs
  • 1 c. raisins
  • 3 1/2 c. flour
  • 1 tsp. cinnamon

    Chop walnuts into medium sized pieces.

    Beat eggs; gradually beat in sugar, then oil.

    Combine dry ingredients and add to first mixture alternately with zucchini.

    Stir in raisins, walnuts and vanilla.

    Turn into 2 greased and lightly floured loaf pans.

    Bake at 350° for 55 minutes.

    Let stand about 10 minutes.

    Put on wire rack to cool.

    If you want, glaze the top.
