- 2 zuccini halved
- 1/4 cup onion, chopped
- 2 cup shredded white fish
- 1 envelope Red Fork lemon herb seasoning sauce with garlic and olive oil
- 1 salt and pepper to taste
- 1 shredded parmesan cheese
Directions

1Preheat oven to 425

2Cut zuccini in half.

3Scoop flesh out with spoon or melon baller.

4Set aside.

5Add zuccini to boiling water for 1 1/2 minutes to soften.

6Saute onion and zuccini flesh in skillet.

7Next add fish, and seasoning until heated through.

8Place zuccini boats in baking dish and fill with stuffing.

9Top with parmesan cheese and bake for 30 minutes or until cheese is melted and boats are heated through.
