Zuppa Di Pesce(Fish Soup)

Ingredients

  • 2 leeks, sliced thin crossways
  • 1 Tbsp. olive oil
  • 2 (28 oz.) cans crushed tomatoes
  • 3 c. water
  • 1/2 tsp. black pepper
  • 1 lb. fish (white meat), cut into 1-inch cubes
  • 1 lb. scallops, shrimp, lobster (any seafood will do)
  • 1 bag mussels
  • 1/4 c. fresh herbs to taste (thyme, garlic, parsley and basil)
  • 1 can tomato paste
  • 1 Tbsp. fresh garlic
  • 1 lb. spaghetti

    In a large pot, saute leeks and garlic in oil. Add paste when browned.

    Add water and crushed tomatoes. Boil.

    Add seafood and spices.

    Cook until fish is cooked through.

    Serve alone as a soup or over pasta.
