- 4 boneless, skinless chicken-breast halves
- 1/2 tsp. kosher salt
- 1/4 tsp. ground black pepper
- 1/4 c. all-purpose flour
- 1 tbsp. olive or canola oil
- 1 tbsp. unsalted butter
Directions

1Season breasts with salt and pepper on both sides.

2Dredge chicken in flour, lightly coating both sides; pat off excess.

3Heat oil in a large nonstick skillet over medium-high heat.

4Add butter and swirl until melted.

5Place chicken in skillet, top sides down.

6Reduce heat to medium and saute 7 minutes, turning once, or until lightly golden on each side.

7Transfer chicken to a plate; keep warm.

8Leave drippings in skillet.

9To make one of the delicious sauces listed above, add ingredients and deglaze the pan (i.e., scrape it to loosen cooked bits).
