Ingredients
- 1 c. uncooked rice
- 1 c. whole kernel corn, drained
- 1 large can stewed tomatoes (Mexican style is excellent)
- 1/2 c. water
- 1/2 c. onion, finely chopped
- 1/2 c. green pepper, finely chopped
- 1 to 1 1/2 lb. ground beef (I prefer ground chuck)
- salt and pepper to taste
Directions

1Place uncooked rice in a buttered 2-quart casserole.

2Add a layer of corn, half the tomatoes and half the water, onions, green pepper and uncooked beef.

3Salt and pepper each layer; pour remaining tomatoes and water over ingredients.

4Season to taste. Cover and bake for 1 hour at 350°.

5Remove cover; bake for 30 minutes longer.

6Yields 4 to 6 servings.
