- 210 g cake flour
- 100 g butter
- 20 ml apricot jam
- 200 g sugar
- 2 eggs
- 250 ml milk
- 5 ml bicarbonate of soda
- Sauce
- 250 ml water
- 200 g sugar
- 50 ml white vinegar
Directions

1Preheat oven to 160°F.

2Mix together the flour, sugar and butter and Bi-carb.

3In separate bowl beat together milk, apricot jam and eggs.

4Lastly add the milk; mix to the flour mix.

5Keep the dough aside and finish the following sauce:

6Bring to boil in saucepan or microwave oven the water sugar and vinegar.

7Put sauce in ovenproof deep glass dish. Pour the dough into the sauce and bake in preheated oven for about 45 minutes or until light brown in colour.

8Optional: Serve with custard.
