  • 1 c. rice, cooked
  • 2 Tbsp. butter, melted
  • 1/2 c. grated cheese
  • 1/2 c. grated carrots
  • 1 egg
  • salt and pepper to taste
  • 1 small can peas or green beans

Directions

    Mix all the rice, melted butter, cheese and carrots together and add the slightly beaten egg.

    Put in a buttered casserole pan or dish.

    Bake in a 350° oven, uncovered, for 45 minutes.

    Turn out on a warm dish or platter.

    Make a hole in the center and pour in peas or beans.

    A tasty and colorful dish.
