  • 1 can sweet cream-style corn (17 oz.)
  • 3 eggs
  • 2 1/4 c. flour
  • 1 tsp. soda
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. brown sugar
  • 1 c. corn oil
  • 1/2 c. raisins
  • 1/2 c. chopped walnuts or pecans
  • 1 tsp. cinnamon
  • 3/4 c. sugar

Directions

    Preheat oven to 350°. In bowl, mix corn, sugar and brown sugar. Beat in eggs one at a time. Add oil and beat until well mixed. Stir in raisins and nuts. Sift together dry ingredients. Add to liquid all at one time and stir until blended. Pour into greased 9 x 15 pan. Bake 35 to 40 minutes (until cakes tests done).
