- 3 corn tortillas, cut into 2-inch strips
- 3 Tbsp. butter
- 1/2 diced onion
- 1 can stewed tomatoes (Cajun style is good)
- 1 c. julienne cooked ham or shredded turkey
- 1/2 c. green pepper strips
- 6 eggs, beaten
- 3/4 c. shredded Monterey Jack cheese
Directions

1Cook tortillas in butter until golden brown; set aside.

2Add onion; cook until tender.

3Drain tomatoes, reserving liquid.

4Add liquid to onion in skillet.

5Cover and cook on high for 3 minutes, stirring frequently.

6Stir in tomatoes, meat and green pepper; heat through.

7Reduce heat to low.

8Add tortillas and beaten eggs. Cover and cook 4 to 6 minutes, or until eggs are set.

9Sprinkle with cheese; cover 1 minute until cheese melts.

10Makes 4 to 6 servings.
