- 1 medium acorn squash
- 3 Tbsp. sour cream
- 1 Tbsp. butter
- 1 thin sliced onion
- salt and pepper to taste

Directions

1Heat oven to 350°.

2Halve squash and remove seeds.

3Bake, cut side down, in pan, containing 1/2-inch of water.

4Remove from oven when tender, but not too soft.

5Scoop out of shell into blender; cool slightly, then add sour cream, butter, onion and seasonings. Cover and blend until smooth.

6Mound into shells.

7Return to pan with 1/2-inch water.

8Top with slices of your favorite sausage and bake for 10 minutes.

9Place under broiler and brown.
