  • 2 acorn squash
  • 1 tsp. brown sugar
  • 4 Tbsp. butter
  • 1 tsp. salt
  • 1/2 to 1 c. orange juice
  • cinnamon (optional)

    Bake until soft at 375°, about 1 to 1 1/2 hours.

    Cut in half. Remove seeds.

    Scoop out insides.

    Leave the half shells intact. In the blender or mixing bowl, add the brown sugar, butter, salt and orange juice.

    Whip until smooth and creamy.

    Spoon into the acorn squash shells and sprinkle with cinnamon, if desired. Serves 4.
