- 2 acorn squash
- 1 tsp. brown sugar
- 4 Tbsp. butter
- 1 tsp. salt
- 1/2 to 1 c. orange juice
- cinnamon (optional)
Directions

1Bake until soft at 375°, about 1 to 1 1/2 hours.

2Cut in half. Remove seeds.

3Scoop out insides.

4Leave the half shells intact. In the blender or mixing bowl, add the brown sugar, butter, salt and orange juice.

5Whip until smooth and creamy.

6Spoon into the acorn squash shells and sprinkle with cinnamon, if desired. Serves 4.
