  • 1 acorn and 1 or 2 butternut squash
  • 1 c. water
  • 1 small can evaporated milk
  • 3 to 4 c. milk
  • 1 1/2 sticks margarine or butter
  • nutmeg, allspice and cinnamon
  • salt and pepper
  • 2 Tbsp. flour
  • 2 Tbsp. oil, bacon fat or butter

Directions

    Melt oil or fat in heavy skillet.

    Add flour; stir constantly over low heat until dark brown, but not burned.

    To this roux, add seasonings, stock to make sauces, gravies, gumbo or whatever.
