  • 9 half chicken breasts, skinned and boned
  • 1 garlic clove, minced
  • 1 onion, diced
  • 2 Tbsp. oil
  • 1/8 to 1/4 c. vinegar
  • 2/3 to 3/4 c. low sodium soy sauce
  • 1 (16 oz.) can or 2 large fresh tomatoes
  • 1 1/2 c. water

Directions

    Brown chicken in oil with minced garlic and diced onion.

    Add vinegar, soy sauce, tomatoes and water.

    Simmer 45 to 60 minutes or until done.

    Serve over or with rice.
