  • 1 1/2 cups lukewarm water
  • 2 teaspoons yeast
  • 3 tablespoons sugar
  • 2 cups flour
  • 1/4 teaspoon salt
  • 4 cups vegetable oil

    Combine the water and sugar in a mixing bowl

    Sprinkle yeast over water and leave for 5 minutes to soften. Mix in yeast, and leave another 10 minutes until it begins to get foamy

    Stir salt and flour into yeast mixture. Beat well to make a smooth batter

    Cover to and leave for at least 2hours to rise

    When you are ready to fry, heat your oil in a large cast iron or other heavy pot until it is about 350°. Beat down the batter to break up air bubbles. Take a small amount of batter, about the size of a golf ball, in the front of your fingers. Holding your hand over the oil and being careful not to touch the oil, push the batter off your hand into the pot with your thumb. It should form a round ball in the oil and rise to the top.

    Fry the puff puff for about 3 minutes on each side, turning when they are golden brown

    Use a large spoon to take it out of the oil. place them on napkins right away to soak up some of the excess oil.

    If preferred you can roll the finished puff puff in table sugar or powdered sugar to make it sweeter ( optional)
