- 2 small cloves garlic, coarsely chopped
- Salt to taste
- 2 egg yolks
- 1 teaspoon Dijon mustard
- Grated zest of 2 lemons
- 1 tablespoon fresh lemon juice
- 1 1/2 cups extra-virgin olive oil
Directions

1With a mortar and pestle or the flat blade of a knife, mash the garlic and a pinch of salt into a smooth paste.

3In a small bowl, whisk the yolks, mustard and lemon zest and juice together.

4Whisk in the oil drop by drop until the mixture begins to emulsify and thicken; then gradually increase the flow while whisking.

5When all of the oil has been added, stir in the garlic and season with salt if necessary.
