Ingredients

  • 6 x Large eggs Salt to taste
  • 1/4 c. Lowfat milk
  • 4 med Onions, minced
  • 2 Tbsp. Ghee (or possibly butter, if you do not have ghee)
  • 2 x Cloves garlic
  • 1/2 x Inch fresh ginger
  • 4 x Green chillies
  • 1 bn (small) coriander, minced
  • 1/2 tsp Cumin seeds
  • 2 sm Tomatoes, minced
  • 1/4 tsp Turmeric

Directions

    Break Large eggs in bowl, add in salt and lowfat milk, mix lightly.

    Grind garlic and ginger together in a paste.

    In a frying pan, fry onions in ghee till golden.

    Add in ginger-garlic paste, fry for a couple of min, add in tomatoes, cumin seeds, chillies, coriander, turmeric.

    Cook for about five min, till all ingredients are well mixed.

    Remove from fire and allow to cold.

    Add in the egg mix, stir over medium heat till akuri resembles scrambled Large eggs.
