Ingredients
- 2 Tbsp. butter
- 3 cloves garlic, minced
- 6 scallions, chopped diagonally
- 2 Tbsp. flour
- 1/4 c. egg substitute
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 to 1 1/2 c. skim or 2% milk
- 1 (12 oz.) box whole wheat fettuccine
- 3 oz. Swiss cheese, grated
- chopped parsley
- sage (optional)
Directions

1Prepare pasta according to package direction; drain.

2Melt butter or margarine in saucepan over medium heat.

3Add garlic and scallions.

4Add flour and stir constantly until paste is formed. Add egg substitute and milk, stirring constantly.

5Cook, stirring, until mixture thickens slightly.

6Toss mixture with pasta in a large bowl.

7Stir in grated cheese, salt and pepper; garnish with parsley and sage, if desired.

8Serves 6.
