All Day Lamb

- 1 leg of lamb
- 1 bottle red wine
- 1/2 lb. unsalted butter
- 2 to 3 sprigs fresh thyme
- Seasoning, to taste
Directions

1Marinate the leg of lamb overnight in the bottle of red wine.

2Just before work make a bag large enough to accommodate a leg of lamb with aluminium foil.

3Place the leg of lamb, the red wine, butter and several sprigs of fresh thyme in the bag.

4Seal the bag and place in a oven and bake at 250F/120C for 8 hours (or more).

5As this is a rich dish, serve with some relatively plain vegetable side dish and simple mashed potatoes (thyme-mashed potatoes goes well with this).

6When cooked the meat will fall off the bone as it is so tender.

7To create your sauce just remove the red wine-butter mixture from the foil and reduce to 1/4 of its size to form a thick jus.
